LEMON OR LIME MARMALADE
(Makes about 2.3Kg)
700g Lemons or limes. 1.4Kg Sugar.
Recipe
Wash the fruit & slice off the stalk ends. Put fruit whole in the pan with 1.L water.
Simmer covered over a very low heat for about 2 hours until the fruit is very soft. Remove the fruit from the pan. Using a sharp knife & a fork thinly slice the fruit, discarding the pips. Catch the juice on a plate.
Weight the fruit & juice & return to pan. If necessary boil the mixture until it is reduced to 1100g.
(The original recipe recommends that you weigh the pan at the beginning then weigh the fruit in the pan to arrive at the1100g prior to adding sugar) Add sugar & stir until dissolved. Increase the heat & boil for about 15min. or until setting point is reached. Remove the scum & allow to stand for 15min. before stirring & bottling.
