Maple Syrup Onion Marmalade
List of Ingredients
300G Small brown onions. 2 Tbsp. Olive oil. 1 Clove garlic thinly sliced.
2 Tbsp. Maple syrup. 3 Tbsp. Rosemary leaves. 2 Tbsp. Red wine vinegar.
Salt to taste.
Recipe
Halve onions and cut them into thin wedges. Place onions, oil and garlic in a medium saucepan over low heat. Cook uncovered stirring occasionally for 25min or until soft.
Add maple syrup and increase heat to medium. Cook uncovered, stirring for 15min. Add rosemary and cook for a further 5min or until onions are sticky and brown.
Stir often to avoid mixture sticking to bottom of pan. Stir in vinegar and pinch of salt. Remove from heat and set aside until cool.
