    Recipe Introduction


    This bread is commonly served when you are invited into the home of a Moroccan family. Within Minutes of your arrival they will have mixed the dough, cooked it and served it with honey or butter and delicous mint tea.


    List of Ingredients


    • 1 cup plus 2 tablespoons of fine semolina flour
    • 1/3 cup of regular semolina
    • 1/4 teaspoon of sea salt
    • 2 tablespoons sugar
    • 4 tablespoons butter (softened) plus some extra for frying
    • butter or honey to serve


    Instructions


    1. Put both types of semolina, salt and sugar in a mixing bowl.
    2. Using your fingertips work in the softened butter and gradually add about 1/4 cup of water to bind to a firm dough. Knead it just enough to make it homogenous.
    3. Roll out the dough to 1/2" thickness. You can make a large round shape or use a biscut cutter to make smaller disks.
    4. Brush a large non stick frying pan with butter and place over medium heat.
    5. After the pan is hot at the dough and cook for about two minutes on each side. You do not want them to color much, just to become firm.
    6. Transfer to a serving platter and serve hot with a dollop of butter or honey on each galette.
