    Corn Fritters

    I always thought that this was a "recipe" until my mother told me that it was how she used leftover corn from last nights supper! Mom lived through the depression and could squeeze the last drop out of anything in the kitchen.


    List of Ingredients


    • 1 cup whole kernel corn
    • 1/2 cup sifted flour
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/8 teaspoon paprika
    • 1 egg, separated


    Instructions


    1. Sift together the flour, baking powder, salt and paprika.
    2. Add the corn and beaten egg yolk.
    3. Fold into stiffly beaten egg white.
    4. Drop from a tablespoon into about 1/2 inch hot fat (cast iron skillet works best)
    5. Fry until golden brown, turning once.
    6. Drain on absorbent paper. (Mom used yesterday's newspaper)
    7. Serve hot with syrup and crisp bacon slices.
