    Strawberry Pie

    Recipe Introduction


    This recipe comes from Marvel Sanders of Morgantown, IN. The Sanders were more like family than friends. Marvel always cooked on a wood burning stove (even after she had a gas stove in her kitchen). Water came from a pump on the front porch.


    List of Ingredients


    • 1 9-inch pie shell (baked)
    • 1 quart Strawberries
    • 1 cup sugar
    • 2 tablespoons corn starch
    • 1/2 pint whipping cream, whipped into stiff peaks


    Instructions


    1. Pike out enough of the best berries near the same shape to cover the bottom of your pie shell.

    2. In a pan, put the sugar and corn starch. Cut up the remaining berries in this pan and mash them with a potato masher.

    3. Cook this over a slow heat until thickened, stirring constantly.

    4. Cool to room temperature.

    5. Arrange the reserved berries in the pie shell, points up.

    6. Pour the cooked mixture over the berries and refrigerate.

    7. At serving, top with a dollap of whipped cream



    Final Comments


    I have substituted the pie shell for tart shells when I needed individual servings.
