    Bran Muffins

    Our apartment building has a fund raising thrift sale twice a year. I donate several dozen of these muffins, and take them down, fresh from the oven. They sell out within the first few minutes.

    1 1/4 cups flour
    1 tablespoon baking powder
    1 teaspoon baking soda
    1 1/2 cups 100% bran
    1 1/4 cups milk
    1 egg, lightly beaten
    1/3 cup vegetable oil
    1/2 cup dark molasses
    1/2 cup raisins.

    Whisk or sift together, the flour, baking soda and baking powder, set aside.
    Place bran and milk in a bowl. Let stand 30 minutes to allow the bran to soften.
    Preheat oven to 400 F
    Prepare muffin pans, either by greasing or use paper liners.
    Add the egg, oil and molasses, mix well.
    Add the flour mixture all at once. Stir just until moistened.

    Bake about 25 minute, or until muffins are golden brown. Serve warm
    Makes 12 muffins.
