Irish Soda Bread
This recipe was given to me by an Irish friend, Annie. She still had her brogue. Just typing this brings back so many memories of Annie and her friend Bridie.
4 cups unbleached flour
1 tablespoon salt
1 teaspoon baking soda
3/4 teaspoon baking powder
1 1/2 to 2 cups buttermilk
Preheat oven to 375 F
Whisk or sift together, all dry ingredients.
Add enough buttermilk to make a soft dough, as for biscuits.
Knead 2 to 3 minutes.
Place on unbuttered cookie sheet.
Cut a cross on the top with a floured knife.
Bake 35 to 40 minutes, until well browned.
Good served warm, or at room temperature. Can be toasted.
