    Oatmeal Raisin Bread

    2 1/2 cups water
    1 cup old fashioned oats
    11/2 tablespoons butter
    1 package yeast
    1 teaspoon sugar
    1/2 cup dark molasses (I use Plantation)
    5 cups bread flour
    2 cups raisins.

    Bring 2 cups water to a boil. Pour over the oatmeal, add the butter. Let stand for 30 minutes until cooled to lukewarm.
    Proof the yeast in 1/2 cup very warm water, with the sugar.
    Add yeast and molasses to the oats. Mix well.
    Add the bread flour, knead well.
    Add the raisins and knead in to be sure they are well distributed in the dough.
    Turn dough into a greased bowl, cover and let rise to double it’s size.
    Preheat oven to 375 F
    This will make 2 large, or 4 small loaves. I make the small as I like to give several as gifts.
    Bake for 25 to 30 minutes or until it tests done. Cover with foil if it’s browning to rapidly
