    Oatmeal Pancakes

    Since I found this recipe, in the early nineties, these are the only pancakes I make. They are wonderful warmed over. Best of all, no fat.


    List of Ingredients


    • 1/2 cups pecans
    • 2 cups buttermilk
    • 1 1/2 cups quick-cooking oats, (not instant) uncooked
    • 1/2 cup all purpose flour
    • 1 teaspoon baking soda
    • 2 large eggs
    • 1 tablespoon confectioners sugar


    Instructions


    1. In a large skillet, over medium heat, cook pecans until golden brown, coarsely chop.
    2. In a large bowl, beat the eggs, add the buttermilk, oatmeal, flour, soda and sugar.
    3. Mix just until moistened.
    4. Stir in the chopped and partially cooled pecans.
    5. Heat skillet over medium heat until hot. Brush lightly with some salad oil.
    6. Pour butter by 1/4 cups into hot skillet. Cook until tops are bubbly and bubbles burst, turn and cook until other side is golden.
    7. Remove to warm platter and hold until all are cooked.

    8. Makes about 12 pancakes. Serves 4
