Banana Loaf Cake

List of Ingredients
- 2 cups all purpose flour
- 1 tablespoon baking soda
- 1/2 cup butter or margarine
- 2 eggs
- 1 teaspoon vanilla
- 1/2 teaspoon allspice
- 1/2 teaspoon cinnamon
- 1/2 cup buttermilk, or plain non-fat yogurt
- 2 large bananas, mashed-very ripe the browner the better, enough to equal 1 cup
- 1/2 cup chopped nuts, if desired
Instructions
- Preheat the oven to 350 F
- Grease and flour 2 small loaf pans.
- Combine, flour, and baking soda. Mix well with a whisk, or sift
- Cream butter and sugar, until fluffy
- Add eggs, vanilla, allspice and cinnamon.
- Beat well
- Blend in the buttermilk or yogurt, then add the mashed bananas, flour mixture along with the nuts if using
- Blend until smooth and well mixed.
- Pour into loaf pans.
- Bake for 40 to 50 minutes
- When done, the loaf will have risen, be golden brown, and no gooiness will be visible inside the cracks on the top of the loaf
Final Comments
No, I did not forget to list salt, as I don't use it except for bread. I don't believe anything suffers by it's omission.
It is best if the bananas are mashed with a fork, that will give you chunks in the batter.
If subsituting yogurt for buttermilk, add a bit of milk, if yogurt is too thick.
