    Cottage Cheese Florentine


    4 cups (6 ounces) medium egg noodles
    1 package (10 ounces) frozen chopped spinach, thawed and well drained
    2 cups cottage cheese
    1/2 cup grated Parmesan cheese
    1/2 cup sour cream
    1/2 teaspoon salt
    1/4 teaspoon hot pepper sauce
    1/4 teaspoon dried basil
    1/4 teaspoon dried thyme
    1 tablespoon butter
    1/4 cup dried bread crumbs

    Preheat oven to 350 F
    Grease a 1 1/2 quart casserole.
    Cook noodles according to package directions.
    In a large bowl mix spinach, cottage cheese, Parmesan cheese, sour cream, salt , hot sauce, basil and thyme. Stir in the noodles.
    Spoon into prepared casserole.
    Bake for 45 minutes

    Serves 4
