    Double Ravioli Casserole

    1 (40 ounce) can beef ravioli in sauce
    2 eggs, beaten
    1 (10 ounce) package frozen spinach, cooked and drained
    1 cup cottage cheese
    1/4 cup grated Parmesan cheese
    1 teaspoon mixed Italian Herbs
    1/2 cup grated mozzarella cheese (2 ounces)

    Preheat oven to 350 F
    Spray an 8x8x2 baking dish with vegetable spray.
    Place half the ravioli in prepared dish
    Stir together eggs, spinach, cottage cheese, Parmesan cheese, and herbs.
    Spoon atop ravioli in dish.
    Top with remaining ravioli.
    Cover with foil.
    Bake for 50 minutes, or until heated through.
    Remove foil; sprinkle with mozzarella.
    Bake 5 minutes or until cheese is melted

    Makes 6 to 8 servings.
