    Potato Cheese Casserole

    10 medium (3 1/2 pounds) potatoes, peeled and diced
    boiling water
    1 teaspoon salt
    1/2 cup melted butter
    1 pound shredded sharp cheddar cheese
    1 cup chopped onion
    2 cups (16 ounces) sour cream
    1/2 teaspoon freshly ground black pepper
    2 cups chopped green bell pepper

    Cover potatoes with boiling salted water, cover and boil for about 20 minutes, or until tender, drain.
    Preheat oven to 350F
    Grease 3 quart shallow casserole
    Mash potatoes coarsely.
    Add butter, cheese, onion, sour cream, pepper and green pepper.
    Stir well to mix.
    Spoon into casserole and bake for 35 minutes.
