    Almond Cookies


    We used to go to Chinatown, just to get almond cookies. It was there that I discovered that the best are made with lard. This recipe was given to me by Sarah Loo, and are as authentic as one can get.

    1 cup lard
    1 cup sugar
    1 egg
    2 teaspoon almond extract
    3 cups flour
    1 teaspoon baking soda
    1 teaspoon salt
    2 cups almond halves

    Preheat oven to 375 F
    Cream lard and sugar until light and fluffy;
    Add egg and almond extract, mix well.
    Whisk or sift dry ingredients in a separate bowl.
    To the creamed mixture, add the dry ingredients, mix well. You may want to use your hands for this.
    Shape into 1 inch balls.
    Place balls 2 inches apart on ungreased cookie pan.
    Flatten slightly by pressing center of cookie with thumb.
    Press in 1/2 almond in each.
    Bake for 10 minutes
