    Lime Cookies

    Several years ago, a Lime Cookie won first prize in the Fancy Food Show. This is right up there with it. You can't eat just one.


    List of Ingredients


    • 3/4 cup butter, softened
    • 3/4 cups sugar
    • 1 egg white
    • 3/4 teaspoon lime oil.
    • 2 cups flour
    • 1/4 cup cornstarch
    • 1 cup pecans, very finely chopped
    • 2 cups powdered sugar


    Instructions


    1. Cream butter, when well creamed, add sugar, beat until fluffy.
    2. Add egg white and lime oil

    3. In a separate bowl mix together, flour and cornstarch
    4. Add to creamed mixture

    5. Slowly add the chopped pecans.
    6. Preheat oven to 350 F
    7. Grease baking sheet
    8. Form dough into 1 inch balls. Place on greased baking sheet.
    9. Flatten balls to 1/4 inch.
    10. Bake 18 to 20 minutes until edges just begin to brown, watch closely
    11. Roll warm cookies in powdered sugar and set on rack to cool.
    12. Shake powdered sugar over them again, when ready to serve.


    Final Comments


    Store in an air tight container. Good keepers.
