    Mrs. Ruben’s Mandel Brot

    Many years ago I had a neighbor that was Kosher. A sweetheart if I ever knew one. While she was always bringing food to me, I could not reciprocate, because of dietary laws. Mandel Brot was a favorite of hers, so I found a recipe. I did buy all the utensils and ingredients, kept them in a special box, to bake her Mandel brot. Thus this is Mrs. Ruben’s Mandel Brot.

    3 large eggs,
    3/4 cup sugar
    1/2 cup vegetable oil
    1 teaspoon vanilla
    3 cups flour
    1 tablespoon baking powder
    1/2 teaspoon salt
    2 teaspoons grated lemon rind
    1/2 cup sliced almonds, (optional)

    In a large mixing bowl, beat the eggs until foamy.
    Gradually add the sugar, beating well.
    Add the oil and vanilla, beating until blended.
    In a separate bowl, whisk together or sift the dry ingredients., and lemon rind.
    With mixer on low, stir in the dry ingredients.
    Stir in the almonds.

    Chill for about 30 minutes.

    Preheat oven to 350 F

    Use a piece of foil, the length of a baking sheet. Crease it down the middle, thus making a dam.(the foil will make it easier to transfer Brot to cooling rack.) Spray foil with vegetable spray.
    Divide dough in half; shape each portion into a 10 inch long log. One log on each side of dam.
    Bake about 25 minutes until lightly brown.
    Remove from pan and cool on cooling rack for about 20 minutes.
    With a sharp knife slice into 1/2 inch pieces, slicing on the diagonal.
    Place on baking sheet,
    Reduce heat to 250 F. bake until lightly browned, about 15 minutes. Turn and bake the other side.
    Store in an air tight container.
