    Peanut Butter Cookies

    These are the peanut butter cookies that I grew up with. They are still my favorite. They stay so crisp in a covered tin.

    2 1/2 cups flour
    2 teaspoons baking powder
    1 teaspoon soda
    1 cup shortening
    1 cup creamy peanut butter (natural is best)
    1 cup granulated sugar
    1 cup brown sugar
    2 eggs
    1/2 teaspoon salt
    1 teaspoon vanilla extract

    Cream shortening and peanut butter, add sugar and beat until light and fluffy.
    Add eggs, one at a time, mix well after each
    Add vanilla.
    In a separate bowl mix all dry ingredients with a whisk or sift together.
    Add dry ingredients to moist, mix well.

    Preheat oven to 375 F.
    Chill for 30 minutes. Form into 1 inch balls. Place 2 inches apart on cookie sheets, press flat with a fork that has been dipped in flour.

    Bake 10 to 12 minutes or until cookies are just getting brown around the edges. Do not over bake.
