    Tom Thumb Cookie Bars


    Crust:
    1/2 cup vegetables shortening (I use butter flavored Crisco)
    1/2 cup firmly packed light brown sugar
    1 cup flour
    Preheat oven to 359 F
    Cream shortening and sugar thoroughly
    Add flour, blend
    Press mixture into bottom of greased 9x13 pan
    Bake 30 minutes.
    Remove from oven and spread on the topping.
    Topping:
    1 cup firmly packed light brown sugar
    1 teaspoon vanilla
    2 eggs, beaten,2 tablespoons flour
    1/2 teaspoon baking powder
    1 1/2 cups shredded coconut (7 ounces)
    1 cup nuts, finely chopped (4 ounces)
    Mix brown sugar, vanilla, and eggs.
    Add the flour, baking powder,coconut, and nuts.
    When well blended, pour over hot crust.
    Return to oven and bake for 25 minutes
    Cool in pan, on a rack.
    Cut while still slightly warm.
    Best serve the same day they are made. They freeze well.
