Apple Coffee Cake
In the fall of the year, no weekend was complete without one of mother�s apple coffee cakes. While she did not use the raisins, the rest is as close as I remember. For the last 50 years, eating this, has made me feel at home.
1 package dry yeast
1/4 cup very warm water, to dissolve the yeast
2/3 cup milk scalded
1/3 cup sugar
1/4 cup margarine,
1/2 teaspoon salt
2 eggs, beaten
In a large mixing bowl, put 1 cup flour to liquids, eggs and yeast. Beat well with a paddle. Change to dough hook, add rest of flour and mix on medium for another 5 minutes. Let rise for 30 minutes,

4 1/2 cups apples,( I prefer Yorks) peeled, halved, and sliced in 1/4 inch thick slices.
1/2 cup sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
4 tablespoons butter, melted.
3/4 cup raisins
Punch dough down and spread into a greased 9x13 pan. Arrange apples in rows on top of the dough. Sprinkle the raisins over the top.
Mix together the sugar, cinnamon, and nutmeg. Sprinkle over apples and raisins.
Dribble the butter over all.
Preheat oven to 350 F.
Let stand for 20 minutes until slightly raised.
Bake for 30 minutes or until apples test done.
Best if eaten slightly warm.
