Candied Ginger
1 1/2 pounds very fresh ginger
2 cups sugar
2 1/2 cups water
Cover ginger in cold water, soak overnight, drain.
Cover again with fresh water and bring to a boil. Simmer 10 minutes, drain, cool.
Peel and cut ginger in 1/8 inch slices. Cover with water, bring to boil, lower heat and simmer for 10 minutes, drain.
Repeat the process, drain again.
Put the sugar and a pinch of salt in pan with 2 1/2 cups water. Bring to boil, and simmer stirring, until sugar is dissolved.
Add ginger , bring to boil again, and simmer 5 minutes.
Turn off the heat, and let sit for 1 hour.
Bring to boil again, and simmer for at least 30 minutes, or until most of the liquid is absorbed. Stir constantly at this point.
When ginger is nearly dry, remove from heat and continue to stir for another 5 minutes. Pluck out pieces and cool, harden on wax paper.
