    Beef - Barbados Stew


    3 pounds beef, cut into stew size pieces
    1/2 cup flour
    3 tablespoon oil
    1 (1 pound) can tomatoes
    1 teaspoon celery seeds
    1 teaspoon salt
    1/2 teaspoon ground ginger
    1/3 cup dark molasses
    1 cup water
    3 small onions, peeled
    6 carrots, peeled and cut into 2 inch pieces

    Heat oil in a Dutch Oven
    Roll meat in flour.
    Brown meat a few pieces at a time. Remove pieces as they brown and set aside.
    When all are browned, return to Dutch Oven.
    Add tomatoes, celery seeds, salt, ginger, molasses and water.
    Cook over low heat 1 1/2 hours or until almost tender.
    Add whole onions and carrots.
    Cook until vegetables and meat done.

    Serve over rice.
