    Minted Onions

    Anyone that lives in Vidalia Onion Country, is constantly on the look out for new onion recipes. I found this in the Woman's Day Encyclopedia of Cooking.


    List of Ingredients


    • 2 cups thinly sliced onions
    • ice water
    • 2 tablespoon fresh mint,chopped
    • 1 cup apple cider vinegar
    • 2/3 cup sugar


    Instructions


    1. Cover the sliced onions with ice water, soak overnight, drain
    2. add the chopped mint,vinegar, and sugar
    3. Stir well until sugar has dissolved.
    4. Serve, divided on lettuce leaves or serve in a tossed green salad
