1 cup wild rice -- uncooked
3 cups water
1 teaspoon salt
1/2 cup cooked chicken -- diced
1/2 cup celery -- diced
1/2 cup green onion -- sliced
1 small can crushed pineapple -- drained
1/2 cup mayonnaise
2 to 3 kiwi fruit -- sliced
Salt to taste
Recipe
Mix wild rice, water, and salt in 2 quart oven-proof dish. Bake uncovered 350 degree oven for 45 minutes or until fluffy. Cool well. In large bowl, mix rice, chicken, celery, green onions, pineapple, and blend in mayonnaise.
Top with kiwi.
