    2/3 Cup Ocean Spray Craisins (Sweetened Dried Cranberries)
    4 Cups Kashi Go Lean Crunch Cereal
    1 teaspoon Baking Powder
    1/4 Cup Egg Substitute
    1/2 teaspoon Cinnamon
    1/2 Cup Splenda Granular


    Recipe



    Preheat oven to 350 degrees.
    Pulse cereal in a food processor about 20 times.
    Add the rest of the ingredients and blend for about 20-30 seconds or until mixture is tacky and well blended.
    Place a piece of foil (dull side up) on a cookie sheet and spray with non-stick cooking spray.
    Spray a 1/4 measuring cup with non-stick cooking spray.
    Drop cookie mixture by 1/4 cup mounds onto foil. You'll need to spray your measuring cup every now and then to prevent the mixture from sticking to the cup.
    Spray the bottom of a glass with non-stick cooking spray and lightly mash the cookies down to look like cookies.
    Slide the foil onto the oven rack and remove the cookie sheet.
    Bake for 10-13 minutes. Do not over bake. The cookies will still feel a little soft when you pull them out of the oven. They will harden as they cool. Cool completely.
    Serves: 12

    Note: I can't tell you how many times I had to make these before I came up with a recipe that could be chewed. LOL! My very first batch was so hard you couldn't even bite into them. I finally got it down pat and submitted the recipe to Kashi.com just to be added to their recipe section. They wrote me back and said they made the cookies and everyone in the office loved them. They chose my recipe as "recipe of the month" for November 2003. I didn't even know they had a recipe of the month. LOL! As a reward they sent me a care package of about 9 boxes of various kinds of their cereal as well as a box of each of their crackers and some coupons for a couple more free boxes of cereal. How cool is that!?! I'm going to have to use some of this cereal they sent and create some more recipes.
    Another Note: If you don't have a food processor you can still make these. Read on....

    "I didn't have a food processor so I took my blender and on the 'chop' setting chopped up one cup of Kashi cereal at a time then dumped that cup in a bowl. Then I mixed the rest of the ingredients and mixed it all up, then ran this thru the blender 1 c. at a time and place it into another bowl. Then I followed the rest of recipe as written and they came out grand".
    The key is getting it all mixed up really well. You want the mixture to be tacky. You can also put the mixture into a pan and cut them into bars if you don't want to make cookies.
