    Black Bean & Sweet Potato Quesadillas - 7

    List of Ingredients

    Ingredients (for 1 quesadilla):

    2 (7-inch) 98% fat-free Mission flour tortillas *
    1 small (1/2 lb) sweet potato (If you are only making one quesadilla, you will have some extra. 1/2 lb of sweet potatoes will yield about 3/4 cups of mashed, which is enough for 3 quesadillas)
    1/4 cup black beans, drained and rinsed
    1/4 cup shredded Kraft Sharp Cheddar Cheese "made with 2% milk" or Sargento Reduced-Fat Milk Cheddar Cheese
    salt, chili powder, and cilantro to taste
    fat-free cooking spray

    *Alternatively, you can use any brand of low-fat tortilla(s). Try to stick to the 97% and 98% fat-free ones. If you can find them, I highly recommend Tumero's 97% fat-free gourmet flour tortillas. One flour tortilla (and they are big!) is only 2 points - just use one folded in half to make your quesadilla. If you use one Tumero's tortilla folded in half, your quesadilla will only be 6 points for the whole thing! Experiment with the flavors... "Jalapeño & Cilantro" is great, and so is "Chipotle Chili & Peppers."

    Recipe

    Peel sweet potato and chop into small pieces. Boil for about 10 minutes or until very soft. Drain and mash with a potato masher.

    Lay out one tortilla. Cover with 1/4 cup mashed sweet potato, 1/4 cup black beans, 1/4 cup cheese, and salt, chili powder, and cilantro to taste. Cover with second tortilla.

    Spray frying pan with a little fat-free cooking spray and fry your quesadilla a few minutes on each side, until cheese is melted and beans are heated through.

    Nutritional Info: 354 calories, 7 g. fat, 6.5 g. fiber (7 points) *

    *Note that 1/2 of a quesadilla is only 3 points. The only reason the whole quesadilla is 7 points and not 6 is because of the 4 g. "fiber cap"
