    AUNT JOHNNIE'S POUND CAKE

    Recipe Introduction

    This makes a large cake and it's very good. I like to serve it with sweetened strawberries and Cool Whip.

    List of Ingredients

    1/2 shortening
    1 cup butter
    2 1/2 cups sugar
    5 eggs
    1 tsp. almond extract
    1 cup milk
    1/2 tsp. baking powder
    3 cups cake flour

    Recipe

    Preheat oven to 300º.
    Lightly grease and flour a 10 inch Bundt pan, or similar type pan. Cream shortening, butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in almond extract. Combine baking powder and flour, stir into creamed mixture alternately with the milk, starting and ending with the flour. Pour into prepared pan. Bake for 1 1/2 hours, or until toothpick inserted in center of cake comes out clean. Cool in pan for 10 minutes, then turn out on wire rack to cool completely.

    (NOTE:The original recipe calls for '2 tsp. Almond extract' but some comments I saw indicated that may be a bit much for most of us...so, I just use 1 tsp. and found it just right, a nice subtle almond flavor. You may also use vanilla extract instead of the almond.)
