    SOUR CREAM BANANA NUT CAKE

    Recipe Introduction

    A good way to use those 'over-ripe' bananas! This 'cake' is very good toasted and spread with cream cheese. Also, as a dessert topped with Cool Whip, or, your favorite frosting.

    List of Ingredients

    2 cups flour
    1 tsp. baking powder
    1 tsp. soda
    3/4 tsp. salt
    1/4 cup butter, or margarine
    1 1/4 cup sugar
    2 eggs
    1 tsp. vanilla
    1 cup ripe bananas, mashed (about 2 medium size)
    1 cup dairy sour cream
    1 cup walnuts, chopped

    Recipe

    Preheat oven to 350º/
    Sift together the dry ingredients. In mixing bowl, cream butter and sugar, beating until light and fluffy. Beat in eggs one at a time, add vanilla. Add the dry ingredients alternately with sour cream, beginning and ending with the dry ingredients. Add the bananas and nuts. Pour into a well-greased 9" x 13" x 2" pan. Bake for 40-45 minutes, or, until toothpick inserted in center comes out clean.
