    CHINESE FRIED RICE

    Recipe Introduction

    This is really a good flavorful rice...goes well with pork or chicken dishes. Also, freezes well!

    List of Ingredients

    1 cup long-grain white rice
    2 cups water
    1/2-3/4 lbs. lean bacon, cut in 1/2" pcs.
    1 cup onions, chopped
    1 cup celery, chopped
    3 eggs, slightly beaten
    3 T. soy sauce, or, to taste (I use more)
    salt and pepper, to taste
    3-4 green onions, chopped
    1/4-1/2 head small lettuce, chopped

    Recipe

    Place rice in water, bring to boil, cover and reduce heat to very low. Let cook for about 22 mins., fluff with fork. Let cool...even better,make day before and let get cold.
    Fry bacon in wok or large skillet until brown and crispy. Add onions and celery and cook until tender. Add cold rice and mix. Make a well in the middle and add beaten eggs, when almost 'set' mix with other ingredients. Add a little olive oil if necessary. Season with soy sauce, salt & pepper, mix all together. Add lettuce and green onions, mix, cover and let heat thoroughly. Taste and adjust seasonings to your liking.

    (Note: you may use other meats...i.e.: chicken, beef, ham, shrimp. Also, I like to add Water Chestnuts and sliced mushrooms. The lettuce cooks down and helps keep the rice 'loose'. This freezes well.)
