    EASY MARINATED VEGETABLE SALAD

    A quick and easy salad to make a day or more before taking it to a pot-luck or picnic!

    List of Ingredients

    1 16 oz. can tiny green peas
    1 12 oz. can white shoe peg corn
    1 16 oz. can French-style green beans
    1 medium onion, finely chopped
    3/4 cup celery, finely chopped
    pimento, finely chopped (optional)
    Sweet-sour Dressing:
    1/2 cup salad oil
    1/2 cup red wine vinegar
    3/4 cup sugar
    1 tsp. salt
    1/2 tsp. freshly ground black pepper

    Recipe

    First, make the dressing by combining all the dressing ingredients in a saucepan, heat to boiling, then, cool.
    Drain all the canned vegetables and combine with onion, celery and pimento. Pour the dressing over all and refrigerate for 24 hours before serving.
