Chicken Salad

List of Ingredients
- 2 cups of cubed cooked chicken, or sandwich chicken
- 2 T. mayonnaise, low fat
- 4 T. vanilla yogurt, low fat
- 2 T. fat free sour cream
- 1/2 cup pineapple tidbits or seedless grapes, or craisins if desired
- 2 stalks chopped celery
- 1/3 cup chopped nuts
- 1 t. lemon pepper
- About 1/2 t. salt
- 1 boiled eggs chopped, if desired
- 1 small green onion chopped
Instructions
- Stir all ingredients together and if too dry, add more yogurt or mayonaise to taste. Refrigerate until cold before serving.
- This chicken salad is good served on toasted crousants. Serve with strawberries or other favorite fruits.
