    Punch Bowl Cake

    Recipe Introduction

    A lady I use to work with made this cake once, at a dinner we had at work. Needless to say it was a big hit with almost everyone, and by using a glass bowl it makes it as good to look at as it is to eat.

    List of Ingredients

    1 - Box of yellow, or white cake mix
    2 - Tub of cool whip
    2 - Box of vanilla pudding mix
    2 - 8oz block of softened cream cheese
    3-6 - Bananas
    1-2 - Pints of fresh strawberries


    Recipe

    Preparation:

    1 - Bake cake according to box instructions, and let it completely cool down

    2 - Prepare the pudding mix according to box instructions

    3 – With a blender mix the pudding mix, cream cheese, and cool whip until smooth

    4 – A few minutes before you are ready to assemble the cake, slice the bananas and strawberries into slice about 1/8 inch thick. (Might be a good idea to squirt some lemon juice on the bananas to keep them from browning so quickly.)

    5 – After cake is cooled down completely crumble it into small chunks


    Assemble:

    1 - Using a large glass bowl or punch bowl, start with a layer of crumbled cake

    2 – Then add a layer of the pudding mix and even it out across the bowl

    3 – Then make a layer of bananas and strawberries

    4 – Repeat steps 1 through 3 until you end with a layer of fruit. Make sure to arrange the last layer of fruit so that it is pretty. What I did was to alternate the fruit so that I had a banana, then strawberry, then banana, then strawberry and so on and so on until the layer was complete.


    *** Hint***

    You can use any kind of fruit that you like in this dish. I’ve heard of people using crushed pineapples and bananas, or using blueberries or blackberries in place of the strawberries. Really it’s up to you and your imagination on what you use in this cake. You could even change the type of cake, or make it less fatting by using fat free or low fat products.
