    My Aunt Teresa & Sister -in- Law Lynn

    Recipe Introduction

    Years ago my Aunt Teresa made Bake Beans for a family function that everyone ranted and raved about. For years I made them just like she did, except I didn’t add any green peppers, because I don’t like them. Then after I got married, my sister-in-law Lynn made her version of Baked Beans and added the cut up pork in hers, and they too were great. So what I did was took the ingredients from Teresa’s version that I liked, and the ingredients from Lynn’s that I liked and made my own version. Play around with it and add what you like, and take out what you don’t. That’s how I came up with my recipe.

    List of Ingredients

    2- Small pork chops, uncooked and cut into small cubes (tenderized doesn’t work very good for this)
    2- Cans of Pork –n- Beans (any brand works as long as they are plain)
    5- Green onions (Chopped)
    1-Cup ketchup (again any brand works)
    1- Cup BBQ Sauce (your favorite brand will work)
    1/8- Cup mustard (any brand, but plain mustard only)
    1-Cup brown sugar
    1 ts- salt
    1 ts- garlic powder
    2 tbs - liquid smoke
    2 tbs – Worcestershire Sauce


    Recipe

    Combine all ingredients into a crock-pot and set it on medium and keep lid on while it cooks. Every hour or so stir it all the way from the bottom to make sure it’s not sticking. I usually let mine cook up to 5 hours, but really it only has to cook long enough to cook the meat. Once the meat is cooked taste the beans to see if it taste like it has enough of everything, and add what you feel is missing. This is usually where I find out that it needs some more BBQ Sauce or Brown Sugar. Use your own preferences to see what taste best for you.

    ***Hint***

    You can cook these in the oven as well so that they truly will be “Baked Beans,” but I would put them on a low setting and make sure they were covered. I’ve done it both ways, and to me it tastes about the same either way.
