Bacon Wrapped Pork Roast

List of Ingredients
- 1 - 1 1/2 lb pork loin or pork tenderloin
- 1 Tbsp olive oil
- 2 Tbsp fresh rosemary
- 1/4 lb bacon or pancetta, thinly sliced
- 8-10 small white onions, peeled
- 1 tsp butter, softened
- 1 tsp flour
- 1 cup chicken stock
Instructions
- Preheat oven to 375 degrees. Season pork with salt and pepper.
- Heat oil over medium heat in large pan. Sear pork on all sides, about 10 minutes.
- Rub pork with rosemary. Wrap with bacon overlapping slightly. Tie with kitchen twine to secure. Place in roasting pan. Scatter onions and rosemary around pork.
- Roast 35-40 minutes, basting occasionally.
- Prepare pan sauce: Combine fat from roasting pan and chicken stock in small saucepan over medium heat, boil 2 minutes. Thoroghly combine butter and flour in small bowl. Whisk into sauce.
