    Bacon Wrapped Pork Roast

    List of Ingredients


    • 1 - 1 1/2 lb pork loin or pork tenderloin
    • 1 Tbsp olive oil
    • 2 Tbsp fresh rosemary
    • 1/4 lb bacon or pancetta, thinly sliced
    • 8-10 small white onions, peeled
    • 1 tsp butter, softened
    • 1 tsp flour
    • 1 cup chicken stock


    Instructions


    1. Preheat oven to 375 degrees. Season pork with salt and pepper.
    2. Heat oil over medium heat in large pan. Sear pork on all sides, about 10 minutes.
    3. Rub pork with rosemary. Wrap with bacon overlapping slightly. Tie with kitchen twine to secure. Place in roasting pan. Scatter onions and rosemary around pork.
    4. Roast 35-40 minutes, basting occasionally.
    5. Prepare pan sauce: Combine fat from roasting pan and chicken stock in small saucepan over medium heat, boil 2 minutes. Thoroghly combine butter and flour in small bowl. Whisk into sauce.
