Beef Provencal Stuffed with Mushrooms

List of Ingredients
- 4 - 4 oz beef filet steaks, pounded thin for rolling
- 2 Tbsp sesame oil
- 1 clove garlic, minced
- 1/4 cup minced scallions
- 1/4 cup minced green pepper
- 6 oz mushroom caps, chopped
- salt and black pepper to taste
- 2 Tbsp chopped fresh parsley
- 1 - 4 oz chunk mozzarella cheese, quartered lengthwise
- 2 Tbsp olive oil
- 1 tsp teriaki sauce
Instructions
- Marinate meat in sesame oil and teriyaki sauce for at least 1 hour.
- Preheat oven to 400 degrees.
- In a large skillet over medium heat, brown steaks on both sides. Remove steaks and put aside.
- In same skillet, combine garlic, scallions and green pepper and cook, stirring, until soft, 2 to 3 minutes.
- Add the mushrooms and cook, stirring, until soft, about 4 minutes.
- Season to taste with salt and pepper, add the parsley, and remove from heat.
- Place 1/4 of mushroom mixture and 1 piece of mozzarella cheese on each filet. Roll up filets and secure with wooden toothpicks.
- Place filets, seam side down, on cookie sheet lightly oiled with olive oil. Sprinkle with teriyaki sauce and bake 10 minutes, until cooked through. Remove toothpicks and serve immediately.
