    Beef Provencal Stuffed with Mushrooms

    List of Ingredients


    • 4 - 4 oz beef filet steaks, pounded thin for rolling
    • 2 Tbsp sesame oil
    • 1 clove garlic, minced
    • 1/4 cup minced scallions
    • 1/4 cup minced green pepper
    • 6 oz mushroom caps, chopped
    • salt and black pepper to taste
    • 2 Tbsp chopped fresh parsley
    • 1 - 4 oz chunk mozzarella cheese, quartered lengthwise
    • 2 Tbsp olive oil
    • 1 tsp teriaki sauce


    Instructions


    1. Marinate meat in sesame oil and teriyaki sauce for at least 1 hour.
    2. Preheat oven to 400 degrees.
    3. In a large skillet over medium heat, brown steaks on both sides. Remove steaks and put aside.
    4. In same skillet, combine garlic, scallions and green pepper and cook, stirring, until soft, 2 to 3 minutes.
    5. Add the mushrooms and cook, stirring, until soft, about 4 minutes.
    6. Season to taste with salt and pepper, add the parsley, and remove from heat.
    7. Place 1/4 of mushroom mixture and 1 piece of mozzarella cheese on each filet. Roll up filets and secure with wooden toothpicks.
    8. Place filets, seam side down, on cookie sheet lightly oiled with olive oil. Sprinkle with teriyaki sauce and bake 10 minutes, until cooked through. Remove toothpicks and serve immediately.
