    ALICIA’S WORLD FAMOUS PEROGY DOUGH

    (Alicia's is a little old perogy place here in Winnipeg. The Canadian actor/comedian John Candy, used to have her perogies flown to his home in California...Many famous people did.)


    3 TBSP Vegetable Oil
    1 Egg, lightly beaten
    1 tsp Salt
    2 ¾ cups Warm Water
    7 ½ cups (measured exactly) Flour


    Combine ingredients. Knead but do not overwork dough. Separate into two balls & let sit covered with a towel for ½ hour.

    Then, pinch off a piece of dough and on a lightly floured surface, roll out to 1/8” thick and cut dough into about 3 inch rounds. (I use a glass) Place about 1 rounded tsp. of your favorite perogy filling in center of the round, (My filling recipe follows), fold perogy in half and with floured fingers, pinch closed to seal. Bring a large pot of salted water to boiling and boil perogies until they come to the top and float for a couple of minutes, remove to colander to drain. Place on serving plate and top with butter fried onions and sour cream.
