    Mushroom Soup with Herb Cheese

    - 500 g ( 1lb 2 1/2oz ) sliced mushrooms
    - 1 large chopped onion
    - 1 finely sliced leek
    - 3 stock cubes (chicken)
    - salt and pepper
    - 1 small herb cream cheese (Boursin if available)
    - a knob of butter
    - 2,5 Litre ( 4 1/2 pint ) water
    - cornflour (optional)
    To Prepare
    Melt the butter in a soup pan and Sauté the onion, leek and mushrooms, to soften. Add the water and stock cubes and simmer for 30 minutes with the lid on. Add the herb cream cheese and Blend the soup in a food processor or with a hand held blender. Season to taste with salt and pepper. Thicken with cornflour if necessary.
