    Escargot and Mushroom Soup

    If you like escargot, you will enjoy this recipe. It is a different way to do them. All my friends just love this soup.


    List of Ingredients


    • 2 tbsp. butter
    • 1/2 cup onions diced
    • 4 cups fresh mushrooms sliced
    • 4 - 10oz. cans of chicken broth
    • 6 tbsp. butter
    • 1/4 cup flour
    • 2 cups whipping cream (I use low fat carnation milk)
    • freshly ground pepper to taste
    • 3 tbsp. butter
    • 1 or 2 cans escargots chopped
    • 1/4 cup fresh parsley chopped
    • 2 green onions chopped
    • 2-3 cloves garlic minced
    • salt and pepper to taste
    • 1/2 cup white wine


    Instructions


    1. In frying pan, melt butter and saute onions and mushrooms until tender. In large saucepan, add chicken broth, sauteed onions and mushrooms. Simmer 1/2 hour.
    2. In medium saucepan, melt butter over medium heat and stir in flour until well blended. Add whipping cream and whisk until thick. Season with salt pepper.
    3. Melt butter in original frying pan and add escargots, parsley, green onions and garlic. Saute until tender.
    4. Add all ingredients including wine to the chicken broth and heat through. DO NOT BOIL.
    5. This can be made a day ahead and refrigerated.
