Escargot and Mushroom Soup

If you like escargot, you will enjoy this recipe. It is a different way to do them. All my friends just love this soup.
List of Ingredients
- 2 tbsp. butter
- 1/2 cup onions diced
- 4 cups fresh mushrooms sliced
- 4 - 10oz. cans of chicken broth
- 6 tbsp. butter
- 1/4 cup flour
- 2 cups whipping cream (I use low fat carnation milk)
- freshly ground pepper to taste
- 3 tbsp. butter
- 1 or 2 cans escargots chopped
- 1/4 cup fresh parsley chopped
- 2 green onions chopped
- 2-3 cloves garlic minced
- salt and pepper to taste
- 1/2 cup white wine
Instructions
- In frying pan, melt butter and saute onions and mushrooms until tender. In large saucepan, add chicken broth, sauteed onions and mushrooms. Simmer 1/2 hour.
- In medium saucepan, melt butter over medium heat and stir in flour until well blended. Add whipping cream and whisk until thick. Season with salt pepper.
- Melt butter in original frying pan and add escargots, parsley, green onions and garlic. Saute until tender.
- Add all ingredients including wine to the chicken broth and heat through. DO NOT BOIL.
- This can be made a day ahead and refrigerated.
