    Chessy Onion Casserole

    List of Ingredients




    Whisk together:
    4 eggs
    3 cups low fat milk
    1.4 tsp. ground nutmeg

    Add:
    1 loaf French Bread (about 16" long)
    cubed (about 8 cups)

    Let mixture stand for 30 minutes, stirring occasionally. Heat in large nonstick skillet:
    2 T. olive oil

    Add:
    3 Large Onions (about 1 1/2lbs. sliced)
    1/2 tsp. sugar
    1/2 tsp. salt
    1/4 tsp. pepper

    Recipe



    Cook over medium-low heat until onion is very tender, about 15 minutes.

    Heat oven to 350 degrees. Grease a 9x13x2 inch metal baking pan.

    Spoon half of bread mixture into prepared baking pan. Top with half of the onion mixture. Repeat with remaining bread mixture and onion mixture.

    Sprinkle with:
    2 cups shredded Cheddar Cheese

    Bake 45 minutes or until puffed and golden.
