    Seaside Salmon Casserole

    Place in casserole:
    1 cup potatoes, boiled and sliced
    4 hard cooked eggs, sliced
    1 can 1lb. salmon, drained
    2 tablespoons chopped parsley

    Melt:
    3 tablespoons butter in saucepan

    Add and stir until smooth:
    3 tablespoons flour
    3/4 teaspoon salt
    dash of cayenne pepper

    Add and bring to a boil while stirring constantly.
    1 can 10 1/2 ounce can cream of mushroom soup
    2 cups of milk.

    Pour above over ingredients in casserole.

    Top with Biscuit Topping:
    2 cups All-Purpose flour
    3 teaspoons double acting baking powder
    1/2 teaspoon salt
    Cut in:
    1/2 cup shortening
    Combine
    1 egg, slightly beaten
    2/3 cup milk
    Add to dry ingredients, mix well until all is moistened.

    Drop by rounded tablespoons onto casserole.

    Bake 25-30 minutes.
