    Carrot Raisin Cookies

    List of Ingredients




    3/4 cup Margarine
    3/4 cup Sugar
    1 cup Carrot,grated
    1 Egg
    1/4 cup orane juice
    2 tsps. Orange peel
    1/2 tsp. Vanilla extract
    2 1/4 cups Flour
    2 tsps. Baking powder
    1/2 tsp. salt
    1/2 cup raisins


    Recipe



    Preheat oven to 375º. Cream butter and sugar until light and fluffy. Add carrot, egg, orange juice, orange peel and vanilla extract. Mix thoroughly. Combine flour, baking powder, salt. Gradually add carrot mixture. Blend well. Fold in raisins. Drop onto greased cookie sheet, using a tablespoon, approximately 2 inches apart. Bake until golden, approximately 10-12 minutes. Cool on a wire rack.

    Yield: about 24 cookies
