    List of Ingredients




    1 28 ounce jar JIFF peanut butter (I find JIFF has the best flavor)
    1 1lb. box powdered sugar
    1 teaspoon pure vanilla extract
    1 whole stick margarine (I find Parkay works the best)

    Coating:
    6 ounces of chocolate chips
    1 tablespoon shortening

    Toothpicks

    Recipe



    Cream together peanut butter, margarine, and vanilla. Add powdered sugar.

    Roll mixture into walnut size balls and place on a baking sheet lined with wax paper. After you have completely filled a pan, set in freezer to harden a bit. Meanwhile prepare coating.

    Place chips and shortening in a microwave safe dish (small but deep). Microwave about 90 seconds, stir. If not completely melted return and microwave 10 seconds more, until completely melted.

    Remove buckeyes from freezer. To pick up buckeyes to coat insert a toothpick in the center (don't go completely down, just enough that it holds and won't fall into your coating.
    Dip the buckeye into the coating, but don't completely cover. Place back on waxed paper sheet and with your finger slightly damp smooth over the hole where the toothpick was. Return to freezer to harden again. Store in refrigerator or freezer until needed.
