    Cherry Cheesecake Mini's

    Recipe Introduction

    Makes twelve mini cheesecakes.

    List of Ingredients

    2 (8oz.) pkgs. softened cream cheese
    3/4 cup sugar
    2 eggs
    1 tbsp. lemon juice
    1 tsp. vanilla
    1 Box Nilla Vanilla Wafers
    cherry pie filling


    Recipe

    Beat together cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.

    Line muffin tins with cupcake liners. Place 1 vanilla wafer in bottom of each tin cup. Fill about 2/3 full with cheese mixture.

    Bake at 350 for 20-25 minutes or until just set. Let cool in pans, then remove, allow to cool completely. Top with a dollop of cherry pie filling; place in fridge for several hours or overnight.
