    A delicate cookie with a wonderful eggnog cream filling. A beautiful addition to your CHRISTmas cookie tray.

    List of Ingredients




    3/4 cup butter
    1/2 cup sugar
    1/4 cup packed brown sugar
    1 egg
    1/2 tsp. vanilla
    1/4 tsp. salt
    2 cup All-Purpose flour
    1/4 cup butter
    1 cup sifted powdered sugar
    1 tbsp. milk mixed with 1/4 tsp. rum extract
    1 tbsp. ground nutmeg

    Recipe



    In a large mixing bowl beat 3/4 cup butter till softened. Add sugar and brown sugar and beat until fluffy. Add egg, vanilla, and salt, beat well. Add flour and beat until well mixed. Cover and chill for about an hour for easier handling.

    Shape dough into 1" balls. Place 2" apart on an ungreased cookie sheet. Press down centers with thumb. Bake in a 350ºF over for about 12 minutes or until edges are just slighty brown. Remove and allow to cool. Meanwhile prepare filling.

    For Filling:
    In a small mixing bowl beat 1/4 cup butter till softened. Add powdered sugar and beat until fluffy. Add milk that is mixed together with the rum extract and beat well. Spoon 1/2 tsp. filling into the center of cookie cookies. Sprinkle lightly with nutmeg. Chill till filling is firm.

    Makes about 50 cookies.
