    Lemon Snowdrops

    List of Ingredients

    1 cup butter, softened
    1/2 cup powdered sugar
    1 teaspoon lemon extract
    2 cups All-Purpose flour
    1/4 teaspoon salt
    granulated sugar

    Lemon Filling
    1/4 cup granulated sugar
    2 1/4 teaspoons cornstarch
    1/4 cup water
    1 tablespoon butter
    1 teaspoon real lemon juice
    1 tablespoon grated lemon rind

    Powdered sugar for dusting


    Recipe

    Preheat oven to 400º

    In a large mixing bowl beat together butter, powdered sugar and extract. Stir in flour and salt. Cover and refrigerate for at least an hour or firm to the touch.

    Shape into 1" size balls. Place two inches apart on ungreased cookie sheet. Using a small glass dipped in granulated sugar, press on shaped dough until about 1/4 inch thick.

    Bake 8 minutes or until edges are golden. Immediately remove to racks to cool.

    While cookies are cooling prepare lemon filling:
    Mix together sugar and cornstarch in a saucepan. Stir in the rest of the ingredients. Cook over medium heat, constantly stirring. Cook until mixture has thickened and comes to a boil. Remove and allow to cool before filling cookies.

    Put cookies together in pairs with filling. After filling all cookies, place on rack and using a sifter, lightly dust cookies with powdered sugar.
