Madeleines
List of Ingredients
2 eggs
1/3 cup sugar
1/2 teaspoon pure vanilla extract
1 teaspoon grated orange peel
3/4 cup sifted All-Purpose flour
1/3 cup unsalted butter, melted, cooled
Powdered sugar for dusting
Recipe
Preheat oven to 375º.
Brush madeleine molds with soft, not melted, butter; dust lightly with flour.
In a medium bowl, beat together eggs, 1/3 cup sugar and vanilla with electric mixer at high speed until about tripled in volume; about 10-15 minutes. Stir in orange peel. Gently fold in flour until blended. Fold in cooled butter. Spoon batter into prepared molds, filling almost to the top, about 2/3 full.
Bake 10-12 minutes or until cookies spring back when touched with your finger tip.
Gently cover mold with wire rack and invert. Cool completely. Just before serving dust with powdered sugar.
Makes 18 Madeleines.
