    Mint Kissed Chocolate Crinkles

    List of Ingredients




    1 1/4 cups All-Purpose flour
    1/2 teaspoon baking soda
    2/3 cup packed brown sugar
    6 tablespoons butter
    1 tablespoon water
    1 cup semi-sweet chocolate chips
    1 egg
    1/4 tsp. pure vanilla extract
    3/4 lb. pastel mint kisses (Fannie-May Candies and Hickory Farms sell these). They are large chip like mints in pastel colors with non-perils on the tops.


    Recipe



    Stir together flour & baking soda. In a pot heat and stir together brown sugar, butter, and water over low heat until all is melted. Add chocolate chips. Heat and stir till chips are all melted. Pour into a large mixing bowl and allow to cool for about 15 minutes.

    Beat egg and vanilla into chocolate mixture. Stir in flour until well mixed (the dough is going to be soft). Cover & chill for at least 2 hours or until easy to handle.

    Shape into 1" balls. Place two inches apart on an ungreased cookie sheet. Bake in a 350 degree oven for about 8 minutes. Remove and top each cookie immediately with a mint, return to oven for about 2 minutes. Remove and swirl softened mint on top of cookie (it will look like icing).
