    Chocolate Covered Peppermint Patties

    List of Ingredients

    1 1lb. box powdered sugar
    3 tablespoons butter, softened
    3 teaspoons peppermint extract
    1/2 teaspoon pure vanilla extract
    1/4 cup evaporated milk
    12 ounce package semi-sweet chocolate chips
    2 tablespoons shortening


    Recipe

    In a large bowl combine powdered sugar, butter, and extracts. Add milk and mix well. Roll into 1" size balls and place on a wax paper lined baking sheet. Take a glass dipped in powdered sugar and slightly flatten each ball. Place in refrigerator to chill for about 30 minutes.

    Just before removing prepare chocolate mixture. Place both chips and shortening in a small microwave bowl. Cook on high for 90 seconds, stirring, and cooking at 15 second intervals until smooth.

    Remove coconut patties and place racks on lined baking sheet. Place coconut patties back on. Using a teaspoon gently coat peppermint patties. Return to refrigerator to chill. Store in refrigerator or in zip-lock type bags in freezer.

    Makes 5 dozen
