    List of Ingredients




    6 eggs
    1 1/2 cups sugar
    1 cup butter, melted and cooled
    1 tablespoon Almond extract
    1 tablespoon Anise extract
    3 1/4 cups All-Purpose flour
    4 teaspoons baking powder


    Note: For those desiring Chocolate Pizzelles: Use all vanilla extract. Melt 3 ounces of chocolate with butter; add as directed. Increase sugar to 2 cups and baking powder to 4 1/2 teaspoons. Follow rest of recipe.

    Preheat Pizzelle Iron.

    In a large bowl, beat eggs. Gradually add sugar; continue to beat until smooth. Beat in butter and extracts. Beat in flour and baking powder until thoroughly blended. Batter will be quite sticky. Using a cookie scoop drop onto grid, I find just slightly off center works best. Close iron immediately. Bake approx. 30-60 seconds depending on your iron. Loosen and remove carefully with a fork or knife point. Place on rack to cool. Store in tightly covered container.
