    Frozen Lemon Cream Pie

    1 Vanilla Wafer Pie Crust-See Ice Cream Pie Crust Recipes
    Filling:
    3 eggs, seperated
    1/4 cup sugar
    3 tbsp. lemon juice
    2 tsp. grated lemon peel
    1/8 tsp. cream of tartar
    1/8 tsp. salt
    1/4 cup sugar
    1 cup whipping cream, whipped

    Recipe



    Prepare pie crust, reserve 2 tablespoons of pie crust crumb mixture, set aside, refrigerate

    In a small bowl combine egg yolks, 1/4 cup sugar, lemon juice and peel. Beat at high speed until thick and lemon colored.

    In a chilled, large bowl, beat egg whites, cream of tartar and salt until foamy. Gradually add 1/4 cup sugar, beating until stiff peaks form. Gently fold egg yolk mixture and whipped cream into egg whites.

    Pour into prepared crust. Sprinkle with reserved crumbs. Freeze until firm.

    Let stand at room temp for 20 minutes before serving.
