    Microwave Rice Pudding

    List of Ingredients




    3 1/2 cups whole milk or half and half
    2 cups instant/quick rice ( example, Minute Rice Brand )
    1/3 cup white sugar
    1/3 cup brown sugar
    2 Tbs. cornstarch
    1/2 tsp salt
    1/2 tsp cinnamon

    2 Tbs. butter
    2 tsp vanilla
    1/3 cup raisins

    1 cup whipped cream or 2 cups prepared whipped topping

    Recipe



    Combine first 7 ingredients. Place in a deep 4 quart bowl and microwave high power 8 to 10 minutes covered until mixture becomes thick. Stir at least twice while cooking. Rice should be tender(see Note). Stir in 2 tbsp. butter and 2 tsp. vanilla, raisins and blend well. Cool well and then fold in whipped cream and chill mixture very well.

    Note: While cooking rice, if rice is not tender , you may have to add 1/2 cup more milk and cover mixture and let rice absorb the additional liquid. Proceed as stated in the rest of the recipe.
